Prawn / smoked salmon starter / lunch

FusionChefGeoff · 06/12/2020 19:21

We have a big starter then a break before Christmas dinner.

Does anyone have any lovely prawn / smoked salmon / other fishy dishes they'd recommended??? Something fancier than a classic prawn cocktail but to be honest I love a PC!

Really sorry, my ideal is Prawn Cocktail too Smile

Smoked salmon, sour cream and blinis?
Or a really good brown bread www.food24.com/recipe/king-sitric-brown-bread/
and salty butter

MrsIronfoundersson · 06/12/2020 19:46

Sorry! Smoked salmon on the bread obviously

Smoked salmon parcels. Basically PC wrapped in smoked salmon like a parcel. Served with watercress/rocket and a wedge of lemon, maybe a bit of bread too.

FusionChefGeoff · 06/12/2020 20:03

Ooooooh @tattychicken might have it there - why didn't I think of that!!!!

Any tips to stop the sauce being really runny and squirting out everywhere??

Smoked salmon and asparagus frittata.

Eggs Royale (similar to Eggs Benedict but with smoked salmon).

Trio of prawns, you could do something like prawns in filo pastry, prawn tempura and garlic prawns.

Smoked salmon and prawn fishcakes with a dipping sauce.

Veloute of asparagus or pea with drowned whole prawns.

Smoked salmon Latkes with horseradish serve as canapés or make slightly bigger and serve with a simple watercress salad.

I'm riffing on the parcels idea but a traditional prawn cocktail would splurge out I would think...

Does anyone maybe have a prawn mousse recipe or something fishy like a pate that I could put in the parcels??

Sorry for belated reply! I normally make them up early in the morning, or even the night before, put them all on a platter, clingfilm then bung in the fridge. Use decentish salmon so you get bigger thicker slices. They hold together enough to transfer to a plate, I always cock up at least one but make sure that's the one me or DH eat. Even if they need to be tidied up on the plate they still look and taste good. I love prawn cocktail. ❤️

OP I always make this:

I add some halved cherry tomatoes for a bit of colour.

Just to add some other ideas
Clams in white wine sauce (with crusty bread to mop the sauce)
Lobster with brown butter sauce
Stuffed mussels with chilli dip
Oven baked whisky prawns
Orange and smoked cod salad
