Does anyone have a tried and tested recipe? I've come across a few but would appreciate first hand knowledge if possible
Thank you!

Norfolk vinegar cake but with darker sugar?

I just use egg replacer with a regular recipe. There’s one in Holland and Barrett.

I've never tried egg replacer. How's the flavour?

It tastes of nothing but it does a decent job in most things. Sometimes cakes aren’t quite as light. In a dense type cake anyway it’s absolutely fine. Some people make a “flax egg” with flax seeds but I’ve never tried that.

I use the delia smith Christmas cake recipe and swap the eggs for Orgran egg replacer. It binds the ingredients and doesn't have any flavour.
