What can I do to improve shop bought mincemeat for mince pies? It's so sweet but I would like to use it.

Fresh cranberries add a nice pop of sharpness but do generate a bit extra liquid. Bramley apples can also serve similar function.

I always bulk mine out with extra dried fruit. Take it out of the jar , add your dried fruit , cherries , chopped flakes almonds etc. A glug of your favourite booze. Cover with clingfilm and leave overnight.
