Long shot but worth a try.... A few years ago I made a really easy but delicious pork terrine which I'd like to make again. I've looked through all my books but can't find it so either I've given that book away or it was one from a magazine and I've not kept it.
I remember it was ridiculously easy yet absolutely gorgeous.
All I remember was blitzing a mix of belly pork and pork spare rib chops (I've a feeling the recipe said shoulder but I just bought chops). Once blitzed it was seasoned (can't remember what with) and mixed with double cream. Then piled into a loaf tin (possibly lined with streaky bacon) and baked in the oven, I put it in a Bain Marie, can't remember if the recipe called for that or I just did it cos that's how I've always made terrines. As said, long shot but would love to make it again. Anyone recognise this and able to provide enough info so I can find the recipe? Thanks
