What can I make with overripe bananas?

Smoothies. I peel and freeze bananas then blend with almonds and milk. I buy ten bananas a week and put the leftover ripe bananas in the freezer when I bring home the new ones.

Banana pancakes. One very ripe banana, beaten with a large egg, add a cup of self raising flour and beat together, add milk to produce a thickish batter. Makes about 4 American style pancakes. All the quantities will depend on the size of the banana, but it seems to work as long as the batter isn’t too thin.

Banana pancake...bites.

Standard pancake mix. Bake them in patty cake tins or Madeline tins. Great for lunchboxes

It won't make it onto masterchef, but my mum always used to put them in a bowl, mash them up with a fork, add milk and then eat.

I never liked it, but she did for some inexplicable reason so maybe you might like it too. Grin

Baked banana oats... I'm obsessed with this:

I tweak it to this:

•	50g oats
•	Handful of blueberries or raspberries or whatever frozen berries I have
•	2 ripe bananas
•	70g raisins
•	2 tablespoons milk
•	2 teaspoons cinnamon
•	1 tablespoons golden syrup

Serve with yoghurt. I have it for breakfast or just as healthy-ish snack with a cup of tea. It's delish.

Banoffee ice cream.

My one lock down success was home made ice cream and it's the easiest thing in the world.

A tin of condensed milk, whisked up with a tub of double cream.
I stick some vanilla pod seed in there to.

Then add what ever flavour you like. I did:

Apple and rhubarb crumble
Apple and caramel
Raspberry ripple with white chocolate
Banoffee

And freeze!

And that is why I put on almost 2 stone over lockdown! 🤦‍♀️ but it's soooo good!

Banana granola. Google the recipe. Much better than anything store-bought and you can add whatever dried fruit, nuts, flaxseed, oats, nut butter, chocolate whatever you like.

Banana bread is dull but it freezes well. You can even slice it before you freeze it. The beauty of it is I tend to have in everything else that's needed.
