Got some frozen cod fillets. Any suggestions for something quite easy and quick - or hands off at least.

I don't eat fish but my ids like it 'en papillotte'.

Make parcels from parchment / baking paper, add some flavour - herbs, chorizo, fold up and whack in the oven.

Cod and chorizo stew really easy - make a base fry some chorizo / bacon, chopped toms, chuck in the fish and leave until cooked.

Spanish stew - as above with olives and beans

Not sure this counts as super easy but I defrost them then dip in egg then flour and fry for a crispy but batter-free fish and chips. Goes down a storm over here.

This Spice crusted cod is delicious.
Other popular cod dishes here are cod spread with pesto, wrapped in pancetta then baked, cod and parsley fish cakes (add tartar sauce with the mash) and this cod in tomato and olive sauce

For another time (incase you don't have the other ingredients) make a chorizo, Parmesan , breadcrumb and lemon zest topping and bake in oven. Delicious.

Ooh these all look great thank you. But I did have to look up Zhoug.

The cheese and parsley sauce strikes a good balance between tasty and easy. I’ll have to get it past dh who has been questioning my cheese sauce liking recently after the cauliflower cheese incident. He’s less of a cheese fan than I am.

Butter a dish steam some spinach place in dish put cod fillets on top of spinach and pour a cheese sauce over and crumble grated cheddar on top and bake til cod is cooked.

I just make fish pie - a little bit of work but then you can shove it in the oven. Microwave-poach the fish, make a parsley sauce, top with mash. Serve with veg of choice - peas mix in beautifully.

I usually use a mix of cod and smoked haddock, though we just used the white fish while I was growing up. I might add sauteed mushrooms to the mix, and I have been known to include a bit of green pepper. Couple of prawns for those who like them (defrost and then tuck down the side so you can see where they are).

If you wanted to include cheese (not necessary imo) you might be better off grating it on top of the potato.
