How to make bubble & squeak??? I feel like I should know already! I just googled it, some have eggs and mayo in? I thought you just mashed it altogether.

I have some lamb, roast pots, roast carrots and parsnips left over.

What I would call bubble and squeak is all the left overs from a Sunday roast mashed up together and fried.

My DGM told me that technically, B&S doesn't include potatoes - she would fry them separately in rounds, but I just mash whatever veg is left over all together.

We would typically have B&S with cold meat left from the roast the next day, with a bit of chutney and mustard. It's better than the roast dinner itself!

I have my own version that I use often for all sorts of leftovers. The best bit is the gargantuan pile of fried onions that do make things rather tasty, regardless of where you stick them, well, within reason and savory dishes, clearly. Then I just chop up everything else and add to the onions. Fry until you get some nice crispy bits, et voila!
Lovely with a tangy salad.

I do mine with leftover potato and green veg - cabbage/sprouts. Mash together and fry.

Mix cooked cabbage into mashed potato and season
Heat butter in a large pan over a medium heat, then add the potato Mix and spread it evenly across the pan. Cook for around 10 mins or until the bottom is golden brown then either brown the top under the grill OR flip the mix over and cook the underside over the hob

You can make it with different veg but potato and cabbage is the classic combo

We have it on a Monday with leftover roast meat (pork or beef) and baked beans - so good
