I would add the curry sauce before the water and dry fry a bit to release the spices then add water. If it’s not “tasty” enough you could add a little bit of stock.

If it is watery then give it a good simmer for 10/15 mins then turn off and leave to stand for a couple of hours “sauces thicken on standing” has been a life saving cooking mantra many a time!

Cut potatoes into 1 inch chunks - boil for 5 minutes and then leave to cool while you do the rest.
Fry onions, over relatively high heat till soften and caramel - don't burn. Lower heat a bit.

Add garlic, crushed, and fry off till just smells of garlic. Put in curry sauce and fry till smells lovely.

Put in potato, add tomatoes, leave to cook till about 15 minutes, add spinach - till its as green as you like it - cook for about 5 minutes, stir - add yoghurt to taste.
