quick family friendly veggie meals

DD has decided she's vegetarian, and my repertoire has to change. We used to eat 3/4 veggie meals a week, but I need a few more now!

My kids don't like Tofu or general meat substitutes (veggie sausages etc) but do like beans & pulses. Our normal veggie meals each week would be chickpea & peach curry, dahl & curry, baked potatoes, veggie lasagne, pasta pesto... I need a few more easy kid friendly meals to put in the mix but drawing a blank.

Risotto with some peas, spinach or other veg.

Macaroni cheese
Cauliflower cheese
Various risottos
Pizza
Egg, beans and chips
Veggie chilli
Stuffed peppers
Veggie shepherds pie
Baked potatoes with various fillings
Veggie toad in the hole
Omelette
Quiche and salad
Dhals
Chunky soups - mine loved curried carrot with rice
Vegetable sweet and sour

So many good vegetarian foods available now.

Obviously a hundred varieties of pasta with sauces from mushroom to asparagus and lemon to good old tomato and olive.

Ooh I could do with ideas too as we don’t have quorn.
How about halloumi and veg kebabs or halloumi burgers and chips, egg fried rice with veg, stir fry noodles, roast dinner with cauliflower cheese instead of meat, cheesy pasta, spinach and ricotta puff pastry bakes, risotto, soup, omelette, an attempt at Taco Bell 7 layer burritos..

Cheesy leeks, topped with breadcrumbs and baked
Stir fried veg with rice noodles and cashews
If kids aren’t keen on veggie sausages you can make toad in the hole with butternut squash and red onions.
Falafel take a bit of time to make but easy to make a load and freeze (or just buy them) serve with salad and pittas.
Root veg casserole
Savoury crumble.

Pilaf

Stuffed butternut squash

Lentil moussaka

BBC good food crispy greek style pie, fasolakia, gigantes beans, tabbouleh, houmous, greek salad, pitta, dolmades, halloumi etc...

Miso baked aubergines and Kung pao sprouts (so much more delicious than you’d expect!).
I’d second vegan richa as a great place to go for curries and dal. I’ve made loads of her recipes and they’ve been lovely. Slightly on the small side for portions though!
Also bbc good food is one of my go tos, and the happy foodie blog. That’s not all veggie but they have loads that are.

BBC food have a lovely mixed bean with halloumi recipe
Mixed bean chilli
Quesadillas
Lentil and walnut bolognese
Deliciously Ella has a lovely sundries tomato and aubergine pasta
Cauldron veggie sausages are amazing and great with toad in the hole
Butternut squash dhal
Miso sweet potato curry
Mac and cheese with extra veggies

We're not veggie but two meals that we all enjoy are these fajitas and Gobi Aloo. If you are feeling really fancy you could add a can of chickpeas at the end and cook for a couple of extra minutes Smile

Placemarking - we want to eat more veggie meals!

Ones we already eat include lentil soup, leek/potato soup, pasta with mozzarella, cherry toms and basil, homemade pizza, Chinese aubergines/noodles/cucumber salad (from Fuscia Dunlop cookbook), vegan sausage rolls (from Aldi!)
