What to do with diced beef?

I do a lovely beef stew with carrots, leaks and beans but I fancy doing something different. I used to have a lovely tomatoey South African stew recipe too but I can't find it now. Any ideas for a change?

This beef with ginger and spring onion is a favourite in our house.

@CoolYourBeansMySon I haven' been on MN over weekend so just saw this. Will track it down. I remember tracing it down. I remember cooking it. But now that I've said I'll produce it for you, am struggling to remember where it is. Will find it later and post!

@CoolYourBeansMySon Here you go: bit of a faff but delicious:

2 large onions, sliced
2ml peppercorns
2ml ground cloves
125ml water
25ml vegetable oil
3cm piece ginger, chopped
2 sticks cinnamon
2 cardamom pods
1kg mutton (I generally just use lamb shoulder), cut in chunks.

1kg v ripe tomatoes or 3 cans chopped tomatoes
1 green chilli, chopped
6 medium potatoes, peeled and cut into chunks
salt, pepper, sugar

  1. Place onions, peppercorns and cloves in water in a large saucepan. Simmer until the water is absorbed.
  2. Add oil and cinnamon sticks and brown until onions are golden
  3. Add meat, ginger, cardoon pods and stir through
  4. Turn down the heat, cover with a lid and simmer gently for 30 minutes
  5. Add tomatoes and chilli. Cover and simmer for 20 minutes
  6. Add potatoes, salt, pepper and sugar and simmer until cooked (I have a note that it works better if you par cook the potatoes first).

I haven't made this recipe in years. Might try it at some point

Thanks SpaceOP! I have some diced lamb in the freezer so will give it a go. Appreciate you digging out the recipe for me.
