I think it might, olive oil is a lot more bitter than sunflower oil. Couldn't you pop out for a bit more sunflower oil instead?

well if its a strong peppery extra-virgin it would probably taste odd and be a waste of extra-virgin olive oil.

If on the other hand its one of the mild blends thats meant for cooking rather than cold, then fine. I use asda mild olive oil in my cooking instead of sunflower, eg in banana muffins.

In answer to your question, I don't know (!) but I made a cake with Olivio spread once instead of butter and it tasted horrible - actually couldn't eat it which is unusual for me and cakes

OliveOil... you don't specify if you are mild or extra-virgin. The symbol suggests not mild, but how can you be on MumsNet if you're the other.

I made carrot cake this week with olive oil instead of sunflower. I was really worried but its all gone and it was yummy.

Yes it's fine, I use olive oil all the time as never seem to have butter or other oils in. Extra virgin too (I'm in Italy so that's all one buys). Can't say I've ever noticed the cake tasting funny, but then I suppose it depends on how big a proportion of the ingredients is oil.

Thanks, I think it will be ok, it just smelt a bit odd, and the mixture wasn't that sweet. It's not extra virgin it is Tescos bog standard

Turned out fine, nice in fact, carrot cake is a bit different to other cakes isn't it? Kind of depends on the icing to be more "caky". Good recipe though, wonder if hubby will like it, kids did....
