Lockdown meals that aren't roasts!

So now I'm not running the DC to their various activities on Sundays, I have time to cook. I've made more roast dinners this year than the past five years and we love them but I want to give them a break to work up to Christmas. What other meals can I make that take a bit longer but are well worth the effort?

@WellTidy I LOVE paella, having it tomorrow's night, use a Jamie Oliver recipe. Tonight we're having rabbit casserole, made by my lovely husband. Can't wait!

Sounds lovely.

Nigella’s pomegranate and date lamb tagine is lovely. We have it with jazzed up cous cous, and also some houmous and pittas if I’m organised

Adding a weak contender just to mark my spot on this amazing thread.

I have hello fresh delivered and amongst some this bubble recipe was a big hit with all inc fussy eaters and teens

Mash potatoes
Cook onion, bacon and cabbage]season well
Add breadcrumbs and shredded cabbage

Pop in a baking tin and bake for 20 odd minutes - eat with a spoon Smile

We do sweet potato and chorizo enchiladas if you want a non mince based option

Beef massaman curry (BBC food recipe) is delicious, I often use chicken instead. Also Hugh's beef with soy and ginger is lovely, I use brisket rather than shin for no reason other than it's what I tend to have.

We make something we call enchilada lasagne. It's basically a enchilada sauce with mince but you layer it with tortillas not pasta and service with sour cream.

  • Potato rosti, poached eggs and sauted sprouts
  • Homemade sausage roll, chips and broccoli
  • cous cous with halloumi, asparagus, avocado, pomegranate
  • roast pork belly, crackling, potatoes, green beans
  • takeaway
  • sausage, beans and chips

My husband is weird and has certain foods that aren't Sunday food 🤦🏻‍♀️

Enchiladas / tacos / lasagne and pasta being some.

Curry, Bourgignon, coq au vin, pie, paella all acceptable. Gammon and mash too.

Not so much now but when it's warmer bbq anything, this Sunday I am grilling chicken shawarma indoors. Last Sunday we had Turkish mince with yogurt sauce and crispy potatoes with Greek salad.
