Chicken pie from nigellas how to eat

Made this recipie from the kids section of 'how to eat'.
(put mash on top instead on pastry)

OMG it is SOOOOO yummy. I highly recommend it and its a great way to use up chicken left over froma roast!
Also REALLY quick, so easy and also cheep too, plus so long as you have left over chicken you are likely to have all the ingrdiants in your cupboard regardless

from memory: so forgive me if wrong but im pretty sure its right

melt 1 tbsp of butter with half a good quality chicken stock cube
then stir in 1tbsp plain flour

then slowly stir in 300ml full fat milk
and make it smooth... cook for 10mins over low heat

Add 200g left over cooked chicken shredded / cut up into chunks

and 125g frozen peas and / or sweetcorn cooked. (I did a mix)

Nigella suggests topping it with pastry but i just used mash!

It looked very good. I was a bit worried about the chicken not cooking for long enough though. She didn't brown it first.

she used left over cold roast chicken that had been fully cooked already

Like the idea with the mashed potato too. I think that'd be even nicer

Nope, if you make your own pastry then it is absolutely delicious, just ask dh and dcs
