Soft (Not Crunchy) Gingerbread Recipe

I love gingerbread men and figure this lockdown is a good a time as any to make some

BUT I only really like the soft gingerbread men, not the ones where they snap.

I've tried a recipe before and got snapping gingerbread men

Does anyone have a good recipe for the soft gingerbread men of my childhood?

Following as I’d love to make these too but broke a tooth once on a homemade ginger biscuit!
