Give me you best casual Saturday night dinners

Something a bit of a treat which doesn't require hours in the kitchen and is eaten socially with teen sons and a few beers Grin

My usual go to would be fajitas or curry. DS2 can't have cheese or tomatoes.

Any ideas for something different?

Pulled pork ( cooked in slow cooker ,place belly on top of a couple of chopped onions and cook on high till falling apart, shred and mix with bbq sauce or apple sauce) in brioche buns with sweet potato fries , corn on the cob and coleslaw

This is my favourite weekend dinner. Sometimes done with chicken instead of salmon. Delicious and healthy.

Was going to say fajitas, burritos, quesadillas.... spag Bol from scratch doesn't take long and serve with garlic bread. Spaghetti carbonara takes minutes but has cheese. The bbc good food recipe is 👌🏽 if anyone's interested. Sorry. Not much to offer but will follow with interest as I also struggle with ideas.

Steak, chips and salad with crusty white bread is a firm favourite here although admittedly dd isn’t included in that. Otherwise it’s a marinated meat + chips/salad. Jerk pork chops are my favourite.

Summer time we would be partial to a BBQ on a Saturday so tend to do a version of that as the weather turns.

How about tacos? Bowls of all the toppings and salads mean ds2 can avoid cheese and tomatoes but the rest of you can still have them.

Home made sweet and sour sauce (1min in a blender) with chicken nuggets, egg friend rice made with microwave rice and stir fried veg. Plus shop bought spring rolls and prawn crackers.

Thai style curries with bought curry paste are really quick and easy. We’re having potato massamum tonight.

Sausage and roast veg pasta is always a favourite. Homemade pesto is easy and significantly nicer than shop bought.

For me, it’s all about the sides. I have a freezer drawer of onion rings, onion bhajis, samosas, spring rolls, focaccia, garlic bread etc that make a normal dinner a bit more Saturday night.

Current favourite here is Cajun chicken burgers.
Bash chicken breasts to thin them out a bit. Rub with cajun spice rub and grill.
Toast ciabatta rolls and assemble into burgers with lettuce, gherkins, tomatoes for those who can eat them, and garlic mayo.
I serve with a homemade apple slaw and salad but if you have teens they may manage chips too!

We’re having a fresh loaf (bread maker doing it’s thing right now) with salad and meats and cheeses tonight.
Other Saturdays we’d have Chinese. I’ll make egg fried rice, noodles with stir fry, duck and pancakes, spring rolls and prawn crackers.

Burgers (homemade), home fries or wedges, and salad
Souvlaki, roasted Mediterranean veg and flatbread
Homemade pizza (but probably not for someone hating tomato and cheese!)
Lamb tajine and couscous

For a treat tea that’s not too much prep, we have;

Homemade diner kebab
Homemade chicken kebab
Homemade burgers (with various toppings such as cheese/bacon/blue cheese/leftover pulled pork)
Pulled pork, chips and coleslaw/pulled pork rolls
Club sandwiches with chips
Steak, chips, salad and a nice sauce
Beef stroganoff
Slow cooked beef brisket with mash lashings of gravy and sometimes Yorkshire puddings.
Fajitas (usually beef with guacamole and salsa)
Spicy fish tacos

Some of those contain cheese or tomato but could be adapted!

Pizzas using bought dough - current favourite is goats cheese and caramelised onions, with a green pesto base and a load of rocket and black olives on top.

Curry - we do a really easy one by roasting some cubes of paneer with chunky pieces of red pepper, onions and cauliflower, then adding a jar of sauce and a tin of chickpeas and warming through

Veggie hot dogs with fried onions and corn on the cob

Chinese style vegetable curry using Goldfish curry sauce, vege, tinned bamboo shoots, tofu and cashews

Jacket potatoes with whatever fillings people fancy

Picky tea with those little stuffed peppers, Higgedy quiche, veggie sausage rolls, olives etc
