Quick - easy muffin recipe for two 4 year olds to make!

you need twiglett's easy muffins:

In a bowl mix:
9-11oz SR flour
1/2 tsp salt
4-6oz sugar

in a jug mix:
8floz milk
3floz veg oil
1 large egg

stir wet ingredients into dry
180C
25min for muffin size, 15min for fairy cake size

Variations:
Add 6oz nuts, raisins or both to dry ingredients
Add 6oz grated apple to wet ingredients (reduce milk to 5floz)
Add 8oz blueberries or any frozen fruit to dry ingredients (reduce milk to 5floz)

I make these ones often. They are very easy as there's no butter to faff around with.

I've also had about 6 3-4yos making a batch each at Playcentre - for each child I halved the quantities except for the egg (e.g. 1c cheese, 3/4c flour..... 1 egg, 1/2c milk)

2 cups grated tasty cheddar cheese
1.5 cups self-raising flour
1/2 tsp salt
1 Tbsp sugar
pinch cayenne pepper
1 egg
1 cup milk

Mix cheese and dry ingredients together in bowl. Whisk egg and milk together in another bowl. Add liquid ingredients to dry and mix lightly.
Spoon into medium or mini well oiled muffin tins. Optionally sprinkle a little extra grated cheese and paprika on top.

Bake at 210 degrees Celcius for about 12 minutes for medium sized muffins or 10 minutes for mini muffines, until golden brown and tops spring back when pressed.

These work best if you don't use paper liners, as they form a lovely chewy crust where they are in contact with the metal baking tin.
