Hi, we are already getting fed up with apple pie, crumble, cake, and stewed. And have loads more bramley apples to use. Any ideas/recipes please?

Get ready for mince pies by making your own mincemeat? Nigella's "Hettie Potter's Suet-Free mincemeat" uses 1kg of cooking apples. Highly recommend the recipe - have had numerous requests!

Its been a good year for Bramleys hasn't it?
I have a load of crumble bases in the freezer, made from lare windfalls and damaged ripe ones.

Delia's date, apple and walnut cake is a favourite, and someone gave me a recipe for apple chutney, which is currently maturing.
I have a lot of decent ones stored in boxes in the garage. I wrap them in newspaper individually, and store in old wine boxes. They do need checking fairly regularly, but I used up the last of 2019 apples in May or June.
I have given a lot away, both windfalls and decent ones, and the neighbour who keeps chickens had the small windfalls and ones that were not good enough to store. We have left some on the ground for the birds- blackbirds in particular love them.
I might take some out of store to make mincemeat though.

Apple chutney and apple jelly are my Regular ways of using up apples. We also freeze portions of apple sauce in ramekins to go with pork. There are lots of cakes which use apples but you don't use many. I offer out bags to friends too.

thanks for your suggestions everyone. Rockingmy - any specific cake suggestions please - not dorset apple cake (sponge and apples) as already getting groans about that.....

Sorry I don't have a specific one as I just google, French Apple cake is a common one but not sure how much it differs to Dorset Apple. I also like Eve's pudding but my favourite is the good old crumble.

thanks folks, sounds as if i havent missed anything obvious. I'll google a few more tarte tartin as that sounded nice but the recipe i had said earing apples, so i was worried it would be a bit sour

If your Bramleys are ripe they will be fine. When mine start going red they are like an eater anyway. Apparently the French don't distinguish between eating apples and cookers.

Swiss Toffee Apple

Bottom layer of stewed apples
Middle layer of whipped cream
Top layer of crunchy, coated cornflakes.

For the topping you melt butter, golden syrup and caster sugar together on the hob and once fully melted, and the sugar has fully dissolved, you mix in the cornflakes to coat them. Allow it to cool a bit before putting it on top of your whipped cream and then leave to set fully in the fridge.

I’m afraid I don’t have an actual recipe with quantities because I just do it by sight.

It’s a nice alternative to a hot apple dessert. (And leftovers are a legitimate breakfast food due to the ingredients basically being fruit, dairy and cereal. Wink)

I think it's more that cookers don't keep their shape. In this recipe Delia uses both to get round that.

thanks folks, a few ideas on here that i'm going to try.

swiss toffee apple sounds a bit like an icecream sundae. i can see me doing a few variations on this as imagine chocolate cornflakes/icecream might also work.

Yes! It is so good @dreamingofsun and I do think you could def switch it up a bit.

It’s one of the few desserts DD1 will eat and is a firm favourite in this house.

This breakfast recipe is also great

I use Bramleys instead of eating apples (it’s an American recipe and Bramleys aren’t available in the US) and other than omitting the cornstarch (cornflour) I follow the first part of this recipe as it’s written and it works great.

For the granola topping, I make 1.5 times the quantity and I add a few wee squirts of golden syrup if it’s looking a bit dry.

You do need to cover it in the oven, for at least some of the time, or it will burn but it is delicious.

It rarely lasts beyond 2 days in our house but I’d say it’d be fine in the fridge for 3-4 days if your family is smaller or less greedy than mine. Really lovely with a dollop of natural yogurt, or on its own.

A different apple cake if you’re bored of plain ones is Ottolenghi’s apple and olive oil cake. It’s a treat but gorgeous.

I make a lot of fruit leather with my apples using frozen berries to vary the flavours because it’s cheaper.
