Currently toasting the pumpkin seeds. I have a ton of stringing pumpkin innards and some but not high amounts of the other stuff. Any ideas/recipes?

I made this yesterday but went with rosemary and thyme and added some honey to the roasting veg and then crumbled feta and toasted hazelnuts when I put it into the pastry. Served with some gravy. It was yum!

I did soup. It went very very wrong. I still don't really understand why but it tasted bad. The bin appreciated the offering in the end Confused

The carving pumpkins are barely edible usually. They are very watery and have no flavour. They are nothing like the other pumpkins and squashes you can get. For pumpkin pie you really need tinned pumpkin or for soup squash is better. I've never managed to make anything decent from a carving pumpkin.

The trick with carving pumpkins is to slow roast first as they are quite tasteless I’m afraid! But good to beef out soups or stews that already have lots of flavour

Carving pumpkins have been selected for their large size and little flesh. They usually taste awful. You need proper eating squashes like turks turbans or blue Hubbard which taste much better

Just reviving this thread in the hope of more suggestions.

I've already made more soup than I can fit in my freezer with the pumpkins we carved, but I still have a pumpkin and a few squashes to use up. Wondering about a pumpkin pie and a squash risotto but would love other suggestions. Don't actually like the taste of pumpkin/squash...
