Delia Christmas Mincemeat Fauxpas

Hi Everyone, I've been unusually organised today and made my Christmas mincemeat but have realised that I've added the brandy too early - it's gone in with all the other ingredients and they are all not soaking in a bowl before going in the oven tomorrow.
It's my first time making it and I'm erring towards just leaving it and then just adding a bit more brandy in after it's been in the oven but could anyone offer advice? If I've ruined it I'd rather know at this stage before I put it into jars!

It’ll be fine. Just add some extra brandy once you’ve cooked it to make up for any that’s evaporated. It’ll be lovely.

Of course, you will have to consumer test the brandy that you intend to use for the topping up, so you must be sure to do that first! Halloween Wink

Thank you all so much for the reassurance! I am not a very confident cook and was praying I hadn't wasted the money as I did double quantities. Feeling much better now!!!

I was once making Christmas puddings and mincemeat at the same time a got muddled which vowel was which! Neither item ended up with all the right ingredients but they both turned out fine Grin in other words, yours will definitely be great!

It will be find. If you have some left over it will keep up to about a year. I make a short crust pastry in a rectangle, spread mincemeat over, then thin slices of apple in the middle third of the pastry. Diagonally cut the other sides about 1-2cm then plait these over alternatively. Brush with egg wash and bake. Lovely with custard.
I also spread it on the base of a pyrex dish the put some lightly cooked apple over then crumble on top. It was delicious.

Delias recipe is good. I have also made the mincemeat cake. I do sometimes make double and give it away. My GP was thrilled with a jar. I pretty them up with fabric top and some curly ribbons.

Oh sounds really good! Thank you. Even the smell of Christmas has cheered me up tonight. I expect we'll be eating mincemeat recipes from mid-November at this rate. I wouldn't normally allow Christmas in the house before December but might make an exception for 2020. Grin
