Help! Biscuit recipe

I need a recipe for making biscuits. All the ones I've tried seem too crumbly and impossible to roll out and cut. Tell me your foolproof recipes, please!

This is foolproof (and doesn't make a mess):
450g plain flour
312g unsalted butter
160g caster sugar
Extra caster sugar for dredging.

Preheat oven 170C/150C fan/gas 3
Cream butter and sugar until soft. Add flour slowly and combine until the mixture forms a soft dough.
Roll into a log approximately 60mm in diameter.
Chill in fridge then slice into rounds a little thicker than a pound coin.
Bake 12 - 15 minutes or until biscuits turn a light golden colour and are slightly firm to the touch.
Sprinkle with caster sugar and leave to cool. Makes about 24
The dough freezes well.

(Denman biscuits taken from 'Federation Favourites - Celebrating 100years'. Apparently they are made every morning at the WI's Denman College, using 6lb flour, 4lb butter and 2lb sugar)

Knittedfairies - you don't roll & use a cutter for those do you?

Sounds like nigella is a good bet though, thanks.

Yes, you roll and cut knittedfairies recipie.
I know it as 123 biscuits. 1oz sugar creamed with 2oz butter. Mix in 3oz flour. Also works with 100g/200g/300g. Can flavour with cocoa, ginger, lemon zest etc.
