Lentil and coconut soup - yum!!

Just refound my recipe from a little vegetarian cafe from when I was a student. It is gorgeous. Big batch cooling down right now:

Ingredients
oil for frying onion
2 onions finely chopped
300g of washed red lentils
1l water
1 block creamed coconut
1 chilli deseeded and finely chopped (I used a tsp of very lazy chilli from a jar)
1 small red pepper finely chopped
1 tbsp cumin seeds (I used 1tsp ground cumin)
3tsp chopped frewsh coriander (I used 1 tsp ground coriander
juice of 1 lemon
salt and pepper to taste

Method
Fry onion unitl soft
Add washed lentils and water and cook for about 10-15 mins until lentils are tender
Add coconut (I cut it up a bit to help it to dissolve), cumin and red pepper and cook for 5 mins
STir in coriander and lemon juice
Add salt and pepper if you need it (I havent added it)

EVEN DH who is a non-lentil eater of any sort thinks it is delish

do you think it would work with tinned coconut milk or is it relying on the bar one to make it creamy? sounds lovely.

Just to add: the recipe says serves 4-6. I think it would be 4 maximum if served with some chunky bread
