Leek and potato soup

Has anybody got a really good recipe for leek and potato soup? I'm always vaguely dispponted when I make it - everyone else's seems so uch nicer than mine!

always use double cream with cooking as it is more "stable". Or you get put a pot of creme fraiche on the table

how much milk and how much cream and do you put them in when the soup is still hot or allow to cool and bring back to the boil - and is a chicken stock cube okay (can you tell I havent made soup since school!)

okay chicken stock cube is okay but get a good quality or use marigold boullion powder which is ace.
as to quantites of milk just do it to taste. I reckon on half stock half milk. If i'm using cream then will use less milk and more stock.

easiest thing is to get your basic soup (cooked leek + pots + stock, liquidised) and then just add a bit of milk at a time until it tastes how you like it.
so glass of milk + season, then taste, more milk etc.

I generally put cream on the table for people to help themselves

I sauteed my carrots this evening intending to make the soup tomorrow and have come home from the pub to discover that dp has eaten them!
