Best Vegetarian Soup Recipes

It's getting colder and I'm bored of eating the same stuff so I'm trying to find some nice vegetarian soups. The easier the better really. Im weaning DS2 and also trying to encourage my toddler to eat more vegetables. Figure if I blend them to a pulp (literally) they can't make too much fuss.

DH doesn't like mushrooms and DS1 doesn't do well with lentils but other than that we will try anything.

I use marigold bouillon as the base for soups which I’d hesitate to give to small children due to saltiness, though there is a low salt one which I’ve never tried.

My favourites are really standard ones: Delia’s leek and potato here

This bbc carrot and coriander one: here is nice and astonishingly cheap to make

My DC’s ultimate favourite is minestrone. To make it more fun for the, I use star shaped pasta www.sainsburys.co.uk/gol-ui/product/sainsburys-stars-500g or mini shells www.boots.com/boots-baby-organic-mini-pasta-shells-stage-2-3-7-12months-250g-10140918
Otherwise, (and if I have time) I make little star shaped croutons with a biscuit cutter.
I like spicy roasted parsnip and cauliflower cheese soups (both BBC good food), Thai sweet potato and sweetcorn chowder.

I roast a chopped up butternut squash and a few peppers all tossed in a bit of oil, and while that is roasting saute some onions and garlic then add a few pints of boiling water and a stock sachet to the pan and throw in whatever other veg I have (carrots, cabbage, cauliflower, whatever) plus whatever seasoning you like and let it all boil up for at least 20 mins so veg are soft enough to puree. Add the stuff from the oven once roasted and whizz it all up.

I like to season with thyme, oregano, black pepper, smoked paprika and a bit of curry powder or cayenne (not too much, just enough to give it a little kick) but any combo can work.

I love sweet potato and coconut soup.

Roast or saute sweet potato chunks with onion and garlic until soft

Blitz with veg stock and coconut milk.

I'd also add chilli and coriander
