Different lunch ideas

Just that, I'm just absolutely bored of my usual lunches.

I eat a lot of soup at this time of year but I'm even fed up of that right now. Don't fancy jacket potato, wraps, cheese and crackers, salad, leftovers....

I like garlic mushrooms on toast occasionally but not every day. I eat a lot of eggs for breakfast so don't want that for lunch as well.

Not usually fussy but I'm struggling to eat lunches right now then end up raiding the biscuit tin instead 😆

Any ideas for something exciting but doesn't take ages to prep (I have two small kids) I made a butternut squash/couscous mixture thing recently which I enjoyed but beyond that, I'm out of ideas. Thank you 🙂

I literally eat last night's leftovers every single day, sometimes with a twist or with some kind of eggs for added protein. Make enough for two meals?

Or you can literally make/cook any kind of food for lunch and eat that. No meals or foods are designed specifically for 'lunch'.

I know you said you don't fancy leftovers, sorry, but you can't literally eat anything you DO fancy. Do you have recipe books? Trawl them. Or if you don't get recipe ideas on the internet.

Stuff on toast - beans, mushrooms, tinned tomatoes, cheese, egg scrambled/poached/fried

Cooked veg with butter, seasoning and some sandwich meat. I like green beans, mushrooms, baby corn and sugar snap peas, cooked for 3 mins in the microwave, chop up some cooked chicken and spring onions, mix it and a tsp of butter plus black pepper and salt in with the veg.

Omelette

Fresh pasta is very quick to cook, just 4 mins in boiling water then use a stir in sauce or make one with some philly cheese spread and whatever frozen veg you like.

Breakfast burrito - scrambled egg with some chopped chilli, bell peppers and a bit of cheese in a wrap.
