I have made a lot of meals but many times I don’t cook the same meal twice because of the effort involved. I have two babies so i don’t know if I’ll have to cook a meal. I keep coming back to the meals which are very simple, not loads of ingredients or having to keep reading the recipe. So far I just have a couple , egg chips and ham or sausage and mash. I want to use fresh ingredients.any ideas?

Shepherd's or Cottage Pie, but use a sugar-less crumble topping with some grated cheese in it instead of of mashed potatoes

I think any kind of tray bake i a good choice. You can add potatoes to it or serve a tray bake with rice/new potatoes.

We eat a lot of grilled/friend lamb chops/pork chops/steak because it's so easy - cook the meat flavoured simply with olive oil, salt, pepper and lemon or favourite herb/spce. In a large pot cook new potatoes, and whatever combination of vegetables I feel like eg carrots, peas, broccoli etc.

Roasted tomatoes - roast with olive oil, balsamic, garlic and chilli (optional) for approx 45 minutes and serve with spaghetti, burrata/feta/mozzarella and avocado.

Personally I find spaghetti bolognaise easy in that I spend 15 minutes prepping things then just let it cook for a bit. A good stew or casserole is relatively simple but does seem to involve a bit more prepping and effort.

Special fried rice. While rice is cooking, fry some diced peppers, spring onion, ham, chicken, prawns and/or anything else you fancy, or boil some broccoli or peas or sweetcorn or whatever you have. Add Chinese five spice and soy sauce to the frying veg. Add the rice and any other veg. Crack an egg in the pan and stir it into the rice. Done. Takes 10 to 15 minutes.

Omelette and salad. Takes five minutes.

Thai curry paste, meat or chicken chunks, tinned coconut milk, any one vegetable. Add to pan in that order, a few minutes apart. Takes 20 minutes.

Serve on rice (pouches).
