Daughter has asked for smooth vegetable soup like some she had in a hotel once, we can't remember where but looking for some suggestions of recipes.

The hotel I worked at added lots and cream to a very blended veg/stock mix. Don't have a recipe but it was very creamy.

We have carrot and yellow pepper... chop and fry an onion and a yellow pepper. Add 3 or 4 big carrots and one large potato (all chopped), add 500ml of stock, i use 2 low salt veg oxo., boil for 20 min, use a stick blender til smooth. Add more stock if you want it thinner.

Also celeriac and cumin soup. Same sort of method, fry onion and cumin. Add chopped celeriac and potato, add stock...etc. nice with a little soured cream and parmesan.

we also have shopping day soup. Take all veg that needs using from fridge, pour some oil on your hands and rub it all over, salt, pepper, roast in oven for 20 - 30 min till edges are crispy and middle is gooey. Mix a bit of boiling water with a stock cube. Pour over roasted veg, blitz and eat with crusty bread.

That sounds about right, it's probably all the left over veg they use.

I make an amazing smooth velvety red lentil and red pepper soup. Fry half an onion in oil, add whole chopped red pepper and fry, add garlic, stock (about 300 ml), half a cup of lentils and big squeeze of tomato puree and teaspoon of smoked paprika. Cook for a while on low heat until lentils cooked through and blend and serve. Makes enough for 3 or 4 people but can scale up / down.
