Ive got four chicken breasts ...give me some inspiration please

have made honey mustard chicken/chicken casserole and chicken pasta over the last couple of weeks.
What can I do that different and EASY!!!!!

This is very easy but delicious. Marinade them in lime juice for a few hours (preferably overnight), and then fry or grill them (with a little sugar sprinkled over them to help them caramelise) and serve with rice and/or salad. Soooo lush.

Fry onion, tons of garlic and green peppers.
Meanwhile, boil potatoes then cut in chunky slices and suatee in with the rest.
Cut chicken into quite fine pieces and add to the potatoes, onions etc. Cook all together til chicken is cooked.

Gorgeous and very easy - lovely with good, crusty bread.

Sprinkle a packet of Old El Paso fajita mix (the normal BBQ one) on the chopped up chicken, and mix in a little lemon juice. Marinade for a while, and then fry or grill.

Really really nice on mixed salad, but very good with jacket spuds and cheese as well.

Tonight I'm having Nigel Slater style pan fried chicken breasts with pesto and mozzarella..yummmmm (well if I can find the damn recipe book we are - I am in need of step-by-step instructions )

Big tub greek yogurt, mix with couple of spoons dijon mustard. Whizz lots of bread crumbs (pref whole wheat or similar + stale) in food proc, if you have one. add dried thyme & salt. Dip chicken in yogurt, then in b'crumbs. Place on lightly greased (olive oil best) baking sheet & bake at 200°c for 1/2 hour or til just cooked.

Dice them, part fry them, put in oven dish with diced peppers, babycorn, mushrooms and red onions, clove of crushed garlic and a splash of olive oil.

Add some cajun spice to taste. Mix and whack in oven.

Couple of minutes near end, stick a few cherry toms in too, and toast some pittas.

Voila! Oven roasted cajun chicken and veg in pittas.

Lovely. My fave.

Works great with quorn too.

Put chicken breasts in oven with olive oil and cherry toms
cook for an hour

take out of oven get a tub of creme freiche put inpan with the cherry toms stir till warmed through and pour over chicken

Gorgeous goes nice with homemade wedges

wrap in bacon or parma ham, inserting a sage leaf. Bake for half an hour in a moderate oven

Put in foil parcel with mixed mushrooms, thyme, cream and white wine and bake in over on 200 for @20-25 mins.

Make a stuffing with blue cheese, garlic, mushrooms & salami, Make slit in bottom of breasts, stuff and wrap bacon, pancetta or parma ham round. Pan fry or oven bake.

Chop chicken and fry in wok with garlic, onion, ginger, lime zest. Chop and pound 4 stalk lemon grass. Add to pan with yoghurt, lime juice, thai fish sauce and some thai curry powder. Cook until sauce thinkens. Serve with jasmine rice and chopped coriander.

Put chicken breasts, coated in olive oil, in a hob-proof dish. Chuck over a punnet of cherry tomatoes. Roast in the oven until chicken is cooked. Remove chicken from pan, chuck in tub of creme fraiche and heat on the hob for yummy sauce.
Serve with rice/mash etc

buy a sharwoods kung po sauce . chop the chicken and pan fry , place in oven with sauce onions and mixed peppers

Peppers, bacon, bung in oven for 35 min cook rice. Yum... Used to be one of my husband's specialities.

Few tablespoons of honey, a few tablespoons of soya sauce.

Half a teaspoon of chinese five spice if you have it.

Marinate chicken for at least a few hours.

Then bake in the oven gas 4/5 for 20-25 mins until cooked through.

Serve with noodles (thanks mr lgj )
