Hi guys, looking for some inspiration for meals for two, can you share your fave recipes please? Bonus points for quick and easy to make...both eat meat although anything too tomato heavy is out.

Grlled/fried steak/lamb chops/pork chops with new potatoes and steamed veg/salad. Make a sauce or similar if you're feeling inspired.

Any kind of pasta with a quick sauce.

Chicken tray bake - make enough for lunch the following day.

Thai chicken curry can be made pretty quickly and easily.

Slow cooker stews and casseroles, with the rest frozen for another day. Ditto spaghetti bolognaise, lasagna etc.

Last night I made sweet & sour pork.

Dead easy, fry off the pork & onions, put them in a slow cooker. Add pineapple chunks, grated ginger, a tablespoon each of soy & white wine vinegar. Deglaze the frying pan with the juice from the tin of pineapple and add that too. Simmer in the slow cooker for 2.5 hours, then add a sliced green pepper, and some flour to thicken the sauce. Simmer for another 15 mins while you steam the rice.

Warm, comforting, about £4 to feed 3. Maybe 20 mins actual effort. Smile

Ooh sounds good @Mintjulia

Making a note of that for my list!

Thanks guys. Deciding what to cook has become increasingly monotonous and I very rarely have an "I really want that for tea" moment!

I’ve found using recipe boxes has really helped me with inspiration. I can’t be bothered to meal plan and buy loads of ingredients. I go back and forth between gousto and hello fresh but prefer gousto and have got quite a collection of recipes now so sometimes I do just skip a week of the boxes and order the ingredients from Asda instead.

I actually posted a Facebook status this very morning listing my everyday meals and asking for inspiration because I'm bloody sick of the same meals over and over and over again for tea.

Just the other day I boiled up a load of vegetables with nothing else for my own dinner because I'm so bored with the usual crap. And I do love to cook. I'll spend all day happily cooking away, baking breads and cakes etc. But there's nowt left to do. I'm bored.

How about downloading some cookery programs, Jamie Oliver current one is fab, I've got the new book and have cooked loads from it, Mary Berry latest series is good as well.

CHICKEN AND LEEKS

CHICKEN, COURGETTE & LEMON PASTA

Both pretty quick and tasty.

I get gousto too, really enjoy it. Sometimes I just pick an ingredient like beef mince and google something like "quick beef mince recipes" and give a new recipe a go!

I am attempting an "easy" version of paella in my slow cooker as we speak. A friend has a fabulous recipe but it's the kind of thing to do when you have all day. This one was a bit slow in that you have to brown everything off etc, but I'm optimistic....

SpaceOP · 30/09/2020 17:21

Oh, and what about pad thai? We made that a few weeks ago and need to do it again. It wasn't as good as a restaurant version, but it wasn't bad and quite easy.

Threehundredmiles · 30/09/2020 19:45

Ooh all of these ideas are great, thanks everyone. We ended up having burger rolls and curly fries tonight, very tasty indeed!

Need to get back to planning a bit more but every day is the same at the moment, I am just a bit fed up in general.
