Gluten free vegetarian mains and dessert

I would like some help planning a lunch for friends - one is gluten free and eats meat, one is vegetarian, my household eats meat.

I was considering a melanzane but not sure what to do as sides or a roast but with a vegetarian option, I'm a whizz at gluten free Yorkshire puddings but terrible at thinking of vegetarian foods.

Also any gluten free dessert recipes beyond brownies and meringues?

You can do an easy dairy free chocolate pot by melting dark chocolate into coconut milk. I've done it in the past, with poached raspberries in a layer underneath .

@SpaceOP I find dried gives more of a punch so I tend to use that. Also nice with bacon in, and peas too.

@FenellaMaxwell I might have to go buy Tarragon, I'm not sure I even have any! Grin.

I'll keep the peas out as I do a lovely pea risotto by cooking the peas then creaming them and adding them to the risotto at the end. Don't want to overwhelm the family with peas! Quite often add a bit of bacon to that one which works brilliantly. Don't do it as often as I used to as we're trying very hard to eat balanced meals ie not too carb/fat heavy in any one meal. And while risotto works brilliantly as a side dish with say, roast chicken, the faff factor can get me down!

Crumble (use gf flour-not rice flour though) or gf sticky toffee pudding.

@wishing3 I do love a crumble and make a good gf one. Sticky toffee pudding is delicious - I've not made a gf one. Will have to try!
