Glut of peppers and courgettes in fridge.......

Chuck in some tomatoes, garlic and onions and make a ratatouille, to either eat on its own or use as a pasta sauce?

Courgette soup is delicious. Fry one onion and two medium courgettes in olive oil and butter. Add one pint of veg stock. Bring to boil. Lower to a simmer, cover and cook for 20 minutes.

Season and whizz with hand blender. At this stage you can also add some fresh herbs - basil works well.

julienne them all and stir fry. Add a poached egg and you have a lovely lunch.

Thinly slice and sautee with onions and garlic. Use with hummous and spinach in a sandwich.

fry them in a bit of olive oil, add some tomato paste and spices and stir into some cous cous, yum

you could fry them up with mushrooms if you have them. add a few tins of tomaotoes and some garlic and puree (or not) to make pasta sauce. add some cream if you like and maybe some basil. Freezes beautifully.

Slice thinly and roast with some garlic, mix with pasta, olive oil and obscene amounts of parmesan.

Courgette gazpacho with peppers.

Ingredients :
700g courgettes
1 red pepper
1 cube vegetable stock
20g finely diced shallot
¼ tsp curry powder
2 tsp olive oil

Recipe :
Dice the peppers finely.

Cook the courgettes in a large pan of boiling vegetable stock for 3-4 minutes. Drain but keep the stock. Run cold water over the courgettes to cool them.

Put the stock in the fridge for a few minutes.

Place the courgettes in a blender with 400ml stock, the curry powder, shallot and olive oil and whizz.

Season to taste and refrigerate.

Add a tablespoonful of diced peppers to each bowl of gazpacho to serve.

I make courgette soup in the same way as nonickname and then melt in Philadelphia style cheese to make it creamy

Stuffed with quinoa/millet/rice and onions, spices like cumin and insides of the veg diced and cooked with the onion. Topped witg breadcrumbs and then roasted with olive oil for 20-40 mins depending on veg.

1)steam courgettes and dress with olive oil/lemon juice/thyme and crushed garlic and serve as side (nice with fish)

  1. tian provencal
    grate courgette and chop peppers. fry with a little olive oil and garlic and rosemary until tender.
    Mix 3 eggs, 2 tbsp flour, 1/2 cup milk, 2tbsp cream & 1/2 cup grated cheese. Add vvegie mixture.
    transfer to ovenproof dish and bake 30 mn
    Serve with tossed salad

  2. Make a sticky tomato sauce (1can peeled tomatoes, lots of olive oil and 1tbsp sugar to caramelise + tsp cumin+tsp paprika+chopped parsley+ crushed garlic)
    Add sliced roasted peppers. Mix and serve on toasted ciabatta with salad and olives
