I made a lentil bake sort of thing today, just lentils and veg cooked on the hob then put into baking tray, covered with par-boiled potatoes and grated cheese and baked in the oven. I've done it before with red lentils and used a tin of tomatoes too but this time I used Puy lentils and so was advised to miss out the tomatoes.

Well, it tasted okay but only okay. DS ate it even though it looked disgusting and I think I only ate it because I was really hungry. DD refused it and i don't think DH will go near it.

But, I made a bit old portion of it so now I need some advise please as to what i can do with the huge pile of leftovers. It's full of fresh healthy veg so there is no way I'm going to let it go to waste!

TIA

Once I added red and green food colouring in an attempt to achieve a nicer shade of brown. It did sort of work.

I dont have any food colourings so might give that one a miss although it sounds like it could have been fun (purple and orange lentils - yummy)
I think i'm going to split what i've got in two and make soup with some and make the rest into lentil chilli. The mini mckenzies love chilli so I'm sure that won't go to waste.
Thanks again

I'm making lentil soup now with the left overs. The mixture already contains onion, carrot, courgette and leeks and various herbs etc. Any suggestions as to what else I might add to make it tasty? I'm all out of fresh garlic though
