Leon's (the posh fast food place) Aioli Chicken - anyone know the recipe?

I love Leon's Aioli Chicken. And, mistakenly, bought brown basmati rice by accident the other day so would like to make it. But, I can't find the recipe on line and it's not in the Leon cook book. I'm sure it's easy but I'd just like to know the exact(ish) recipe.

According to their menu/ingredients, the rice is dressed with tamari, lemon juice and olive oil. Try 2 tbsp tamari, 3 tbsp lemon juice and 3 tbsp olive oil and adjust to taste (I don't know the Leon recipe but I use that ratio for salads). You could substitute tamari with soy sauce.

The chicken is just chargrilled chicken thighs drizzled with aioli (I think you can buy the Leon aioli in supermarkets) and topped with ground sumac, pomegranate seeds, fresh mint and parsley. Waitrose sell sumac but you can probably buy a sack of sumac for the same price if you have a middle eastern deli nearby. The slaw is the sesame slaw from the recipe book, I think.

I tried this recipe and it was amazing!! Would totally recommend it. If you get the correct measurements it tastes the same!
