colditz · 09/10/2007 18:00

1/2 cup butter
1 cup sugar
2 cups self raising flour
2 eggs
3 mashed bananas

Cream butter and sugar together
Whip in eggs
Mash in the bananas
Fold in flour

Put in a greaseroof papered loaf tin, and bake at 160 for about 40 minutes - 1 hour. Keep checking with a sharp knife to check if cooked.

Keep in the fridge, slice and use for lunchboxes.

Cheers, I was thinking of posting a request for an easy banana bread recipe (but then I ate all the bananas)

Ah you have to use really soggy manky bananas for this anyway
