Healthy oven/microwave food with minimal prep at end of pregnancy?

I need some inspiration for the shopping list. I'm over 40 weeks pregnant and I nearly always cook fresh so I'm struggling for ideas. I don't want to be stood up cooking for any longer than necessary this week as I've had enough, and I also don't want a load of fresh stuff in the fridge if I end up in hospital for a few days. I already have fresh freezer meals prepped for when baby is here but I need some easy meal ideas for the next few days as we only do a shop once a week (just me and DP to feed - he will happily cook if I ask but he works late and I get hungry 😂).

The only things I can think of is frozen fish in a bag or something like the so juicy chicken bags with microwave rice/veg. Any other lazy ideas? Thanks 😊

Slow cooker stuff? Also tray bakes. Jacket potato with toppings

My go-to dishes when the idea of chopping things is just way too much to handle:

  • chickpea and spinach curry. Tin of chick peas, jar of whichever is your favourite curry sauce, fresh spinach, cook them all together in a large flat-bottomed pan on the hob. If you are feeling really energetic you could chop up a pepper and add it too :-) serve with naan bread.
  • stir fry with prawns, cashew nuts, green beans. Add your favourite stir-fry sauce and serve with microwave rice. You can just tear the green beans rather than slicing them.
  • salmon wraps - if you feel like splashing out and getting the ready-cooked salmon fillets or flaked salmon, it goes well in a wrap with green salad and horseradish sauce.

Yes to pp's suggestions of tray bakes, Rukmini Iyer (of the Roasting Tin cookbooks) is the queen of these so might be worth a google of her recipes?

Do you have a Cook nearby you?

They sell home cooked meals which are frozen and you can just put in the microwave or oven

Thanks for the ideas! No cook near by unfortunately! I like the tray bake ideas, and will look something up for the slow cooker. Maybe I'll compromise and have a couple of ready meals if they look nice enough, not really a huge ready meal fan though!

My nesting tends to involve frantic cooking, so I might not have the best advice, but my go-to meals for when I can't be bothered cooking are bought fishcakes with a salad, jacket potatoes also with a salad, or possibly tinned ratatouille, pasta with broccoli, bacon and chilli, some sort of fritatta, and, tbh, a fish finger sandwich in a baguette with tartare sauce and garlicky green beans on the side.
