Inspire me for dinner tonight please!

I'm stuck with what to have for dinner tonight.

We're just back from two weeks in Italy and the food there was amazing, and I just can't think what to cook tonight.

I don't know whether to cook Italian or go with something else. I'm just fed up being home I think and I just can't be bothered thinking of what to cook.

We are having tagliatelle with roasted beetroot, feta and pine nuts. I go to the HelloFresh! website and download their weekly recipes when i run dry of inspiration and feel like I've cooked and eaten every meal I can think of a gazillion times..

We have some eggs, onions, peppers and so on to use up and so it is a quick and easy oven baked frittata in the Gin household tonight.

My go-to dinner after a day travelling is usually t/a curry or dinner in our local pub !

We recently returned from Italy, & I've been cooking Italian food. I often do this when I get back from wherever.
I even got a chef to tell me what was in the tripe dish, but I can't find anywhere near me that sells it! Nor osso buco.

I'm having tuna steak marinated with black pepper, sea salt and chilli flakes, served with spaghetti and broccoli that gets tossed in the wok once the tuna comes out so gets coated in the residual oil

We went for chorizo and veggie gnocchi bake with tomato and mascarpone sauce. With cheese on top crisped up under the grill. So good!

I'm currently working my way through Jamie Oliver new book and I have just cooked his salmon en croute, I'm not a massive salmon lover but I have to say it was very nice, we even had leftovers the next day cold with salad.

I like gnocchi fried but when it's boiled its texture has me a bit retchy

I may do a stir fry with bacon, orange pepper, sliced mushrooms, baby sweetcorn & wholemeal rice to make a change from fresh egg noodles.
