Muffin recipes for fussy eater

Can anyone please recommend a muffin or fritter recipe which contains fruit and/or vege, but doesn’t actually look like it contains these?

DS(5) is very fussy and will object to even seeing grated or chunks of pieces of fruit/vege in anything, so I thought maybe try these in muffins and fritters.

I was thinking maybe puréed fruit or vegetables in a muffin or fritter might be the answer.

These muffins are made with bananas. You could omit the cinnamon and raisins & put a spoon of cocoa powder & some choc chips in

DS was also fussy (ASd) so every spag bol / curry I blended, to match head size, carrots & peppers. It cooks right down and is indistinguishable in the sauce so, as it isn’t purée, still has lots of fibre. I still do it now he’s an equally fussy teen!
