Any ideas for a huge amount of mint?

I have ended up with quite a ridiculous amount of mint from my garden, does anyone have any suggestions on anything I could make with it, or ways to preserve it?

I've already made 3 large ice cube trays of mint and walnut pesto, a couple of trays of mint ice cubes to put in drinks, a freezer bag of chopped up mint to sprinkle in with vegetables/salads, and 5 jars of mint sauce...

I've also got a whole load hanging up to dry. And yet somehow I still have loads leftover! 😂

I've tried Googling but it all seems to be add a bit to this or that kind of ideas, rather than something I could do with large amounts of it.

My local indian used to do a mint lamb hariyali. It was delicious.

Fresh mint ice-cream by infusing handfuls of mint in milk/cream for an hour or so and straining off, pushing down on leaves to extract flavour combine with vanilla pod

Fresh mint tea. Lovely. Or mojitos, depending on time of day!

And if you don't want the same problem every year, make sure you plant the mint inside a pot - stops the roots expanding and it absolutely taking over!

Won't help re large amounts but I love homemade tzatziki.
You could offer to friends / family? In our group of friends we often share out excess garden produce which means we benefit from each other's gluts
