Made some plum brandy and now have a bowlful of very boozy plums. Is there a gluten free cake/recipe/idea for using them? Pref Without gluten free flour as it’s friend who is gf not me...

A crumble topping? Using GF porridge oats (some blended some whole)

Pavlova topping?

That sounds like it would go really well alongside a dense chocolate torte like https://www.jamieoliver.com/recipes/chocolate-recipes/flourless-chocolate-cake/

Or serve warm with vanilla ice cream?

They go so well with rice pudding www.goodhousekeeping.com/uk/food/recipes/a535463/rice-pudding-with-sticky-plum-compote/ or www.delicious.com.au/recipes/rice-pudding-roasted-plums-jamie-oliver/kg3znkju

I had a very nice plum Eton mess at a restaurant once.

Plum ice cream www.redonline.co.uk/food/recipes/a502021/plum-ice-cream/

You could make a trifle and use Mrs’s Crimble’s Gf madeleines (from Tesco).

I love poached plums topped with meringue and lightly browned. Very swish.
