Low carb quick prep lunches?

Just that really, I'm struggling for ideas for lowish carb (not keto, just not heavy on carbs) quick and easy lunch ideas. Any suggestions, or good resources?

I find that broccoli is a good way of bulking out a meal. So I halve the amount of simple carb and have a big portion of broccoli instead.

This works well with leftovers. So a half portion of whatever was for supper the night before plus broccoli.

Avocado is quite low carb I think? And if you're not veggie, tinned fish (eg with lemon or chilli, but not a tomatey / spicy sauce as they tend to be sweetened). With lots of salad, including as pp suggested, leftover veg from last night. Surprisingly nice with vinaigrette I find!

BBC good food have a nice Dahl with sweet potato and spinach recipe. You could swap some of the sweet potato for another vege. I have it without rice

Once upon a chef website has a really yummy French lentil salad. I make it while I’m cooking dinner in the evening and get 2 lunches out of it

Half a baked sweet potato with high protein and fat filling eg tuna or chicken mayo with large side salad.

If you fancy a sandwich you can have one using burgen or livlife bread - low carb.

Oh and I sometimes whisk an egg and stir it into soup if its a bit of a 'thin' one. Ups the protein and makes it love ly and creamy (don't boil it though!)

Leftover chicken with salad, prawn mayo or tinned fish with salad, omelette and salad. I made a lovely veg mix by frying courgette pieces, halved baby toms, beans, garlic, basil and olive oil the other day.

Grilled chicken /fish/prawns with roasted vegetables
Egg Fritata with cheese and vegetables
Stuffed courgettes with mince and tomatoes
Salad with chicken and cheese.

Low carb as in protein and fat based with vegetables or pulses for carbs. I have tended to base meals around pasta, potatoes and rice for years, and have only recently had the dawning realisation that this makes me sluggish, contributes to being overweight etc. So trying to figure out a sensible switch of focus from carb to protein without drama or going extreme (ultra low carb definitely doesn't suit me).

Thanks for all the ideas so far, bring on any more you think of, this is all really helpful!

Greek salad
Feta omelette
Homemade cauliflower soup
Tuna, salmon or mackerel salad
Scrambled egg with mushrooms & tomato
Yoghurt with nuts and berries

Bag of salad and then top.it with whatever you may have had in a sandwich so tina mayo, chicken, cheese avocado or a combination of the above is fast and delicious. A ceaser type dressing which is low in sugar (so careful with the low fat versions)

Lentil/chickpeas/ bean salad.
Dahl!
Stew lentils with chicken and chorizo
Butter beans and clams stew.
Lamb shawarma with salad and picked cabbage
Salad nicoise.
Green beans with tomato sauce and bacon

If including tortilla wraps all sorts of quesadillas, burrito, tacos.
I still myself eat carbs just aim for a smallish part of the dish focusing on upping vegetables and a good source of protein/fat

Frkadellen meatballs are an easy snack. Add salad and mayo and it's a meal. I also make frittata in silicone cup cake trays and add loads of left over veg and cheese, they are perfect for lunch.
