Mae Ploy red curry paste

I've read good reports about this, so I've bought some.
The instructions are only in Thai.

I'm planning to use 500g chicken + veg,
Any idea what quantity of paste I should use to make a medium curry - nothing too hot.

Go for a small amount, as it is much stronger than usual curry pastes and can blow your head off if you use too much. One tablespoon for 500g chicken or thereabouts? You could taste a tiny bit and see how spicy you find it.
