There's a lovely Jamie Oliver tray bake that can be adjusted to suit you. It includes salmon, shell on prawns, cherry, tomatoes and asparagus with olive oil, garlic and anchovies. I don't always add the prawns and also throw in purple sprouting brocolli and new potatoes. There are also lots of variations on these kinds of tray bakes in the Roasting tin books by Rukmini Iyer.

I buy whole seabass from the fishmongers. They take of the head and descale it. Yes then literally just shove it in the oven with lemon slices and thyme inside and drizzle some olive oil and sea salt and pepper on. It is lush and looks very impressive.

Super simple as in out of packets?

Frozen Mediterranean veg mix, bake for 15 mins (so not frozen, you can also just thaw)
Meanwhile 300g couscous, zest and juice of a lemon, finely chopped parsley, black pepper, slug of olive oil, mix, add 400ml cold water and leave to soak. Put the part cooked veg in with the couscous, stir mixing it up and spread on the bottom of an oven dish, put a side of salmon on top, finely sliced lemon on top of salmon then cover in foil, bake 15 mins at 190/gas mark 5. Remove foil and bake further 5 mins or to desired salmon cook level (I like mine half raw so it's 2 mins). Serve with tossed green leaves.

If having guests the couscous and veg mix can be done up to 24 hours ahead

Buy a large bit of salmon, coat the top of it with a layer of chilli pesto (or tomato/olive pesto if you aren’t a chilli fan). Then cover it with shop bought breadcrumbs and season. Pop it in oven for about half an hour and serve on a bed of spaghetti with a tomato sauce spooned through it (not runny, just coating the spaghetti).

Delicious, easy and looks quite impressive.

We just had pan fried sea bass (so crispy and salty) with roasted new potatoes in skins and slightly spicy tomato sauce with chorizo and peppers and kale from the cosy club today. Amazing!

I made this recently. I didn't have pak choi but I made stir fried peppers and carrots instead and added a little soy sauce and hoi sin. I also made a side of coconut thai rice.
