We are the new owners of an ice cream machine (with the cooling inbuilt). I'm looking for some fab recipes to try out.
We've so far just done vanilla and cookie dough

I haven’t done caramelised apple but I did toffee apple at Halloween www.redonline.co.uk/food/recipes/a501919/apple-and-toffee-ice-cream/ I didn’t bother with the crumble bit.

You need Robin and Carolyn Weir's book of ice creams, sorbets and gelati - I've never had one of theirs fail because they really get into what makes good ice cream. They have rocky road and cinnamon recipes plus one with apple puree swirled through vanilla where it would be easy to caramelise the puree.

I can personally recommend these flavours: raspberry, banana, dulce de leche, Bailey's, lemon, strawberry, raspberry, blackberry, Seville sorbet, honey, chocolate, chocolate mint, coffee, vanilla...

I've heard great things about David Lebovitz's book The Perfect Scoop. Haven't used it myself but tons of rave reviews and blogs about it online.

I have David Leibovitz’s book and use it every summer. Lots of interesting ice cream flavours.
