Kombucha brewing question

I am making my first batch of kombucha which I'm very excited about. The first brew has finished (and tastes great) and I've taken the scoby out with a generous cup of the original brew and bottled the rest for their second brew.

My question is this. The scoby grew another layer and the original scoby is still there as well. Both are currently sitting in the cup of original brew / scoby hotel. What am I supposed to do with them both?

Can I reuse the original scoby to make a new brew, or do I have use the newer one? Either way I have a spare, so what do I do with that?

Lastly, how long can a scoby sit in the scoby hotel?
