Home baking that will stay fresh

What home baking would people think would stay fresh for a couple of weeks if properly sealed?
My partner is deploying and is like to put some home baking in his care packages but I don't know how long it would take to arrive so it needs to be something that will stay fresh!

Fruit cake. We make them up as cookies rather than a cake which works brilliantly. They get a bit harder over time, but in no way diminishes the yumminess.
