Best recipes for random mixed veg (on this occasion carrots, tomatoes, celery, spring onions and baby corn)?

Roasted? Carrots and celery will probably take 40mins, then add the tomatoes, spring onions and sweetcorn.

Serve mixed into penne pasta (or any pasta shape) - more olive oil, a bit of chilli/some dried chilli flakes and sprinkled with parmesan.

Sorry - meant to say, after cooking carrots/celery for 20 mins then add the rest and cook for another 20 mins

Cook your veg - boil or roast - mix with cooked rice and herbs, cover with nice strong grated cheese and bake or grill. Delish hot or cold, as main dish or with meat/fish.

Don't boil toms or spring onions... - just gave you my standard 'too much veg in fridge' recipe without reading thoroughly!

Did your rice thing this evening Annabel with the veg originally mentioned plus sweet potatoes, and I added BIWW's chillies - absolutely delicious

Will add this to my regular repertoire and also try the pasta version next time

To think that half the time I used to end up letting the excess veg go off in the fridge

For those particular vege a Thai curry would be lovely; not the tomatoes though.
