So for 4 months I was happily been making amazing sourdough bread. However for the past 6 weeks I've been having the below problem every time. Where have I done wrong?

What method did you use? Initial reaction is that it’s over proofed

Not a bread expert, but I would think it's weather related if it's only happened in the last 6 weeks. Is it really hot in the kitchen? Could try either reducing proving time or leaving the dough somewhere cooler?

Yep overproofed. My sourdough never takes as long as it says, and even less time when it’s hot. If you poke the dough with your finger and the depression stays, it’s overdone - should bounce back halfway.

Thanks all, I'm using the bake with Jack method however could definitely do a shorter proof time as I sometimes left it w hit longer for a more sour taste

Need to make a new starter though as my cleaner washed up my old one Sad
