Beef mince brown before cooking?

I ordered some beef mince from a supermarket, it came via home delivery and I put it in the fridge.

Use by date was Saturday.

I cooked it this morning but when I took it from the packet it looked as if it has been browned already.

Usually it's red so not sure what to do. Didn't smell bad or look funny, if anything it looked a bit dry.

Cooked it and now it looks delicious but am feeling nervous about eating / feeding it to people!

Does anyone know of this is usual after a few days in the fridge. I thought it would be fine going by the use by date.

It’s fine

As the meat starts to age the myoglobin changes to metmyoglobin, which is grey- brown in color. This doesn't indicate that the meat has spoiled, but does have an unappealing color when raw. It doesn't effect the cooked product- it cooks the same

I tend to bin it tbh but it probably is fine. Wojld probably make myself I'll through thinking it was making me I'll!

I take the brown off and bin it but then I'm really scared of getting sick.

I had some diced beef that went a day over its date in the fridge and had gone brown. I put it in the freezer and wrote on the top to check once defrosted. Anyway, I got it out this week, defrosted it, it was fine. I made a stew and it was delicious, no bad effects from the brown diced beef.

You’d know if it was off by the smell. Sounds fine.

There's nothing wrong with the meat, it's just oxidisation. It will be absolutely fine to eat. If it was off it would be slimy and smell funny.
