Lots and lots of tomatoes

I bought a huge box of tomatoes (6kg) for £1.50 from the market this morning. They're very ripe so need to be used up. So far I’ve made a giant batch of roasted tomato pasta sauce, but only used half. Any ideas how to use the other half?

I often use them in chillis and curries if I’ve run out of tinned tomatoes.

No, I’ve always used either balsamic or red wine vinegar depending on what’s at the front of the cupboard!

Haven’t made the caponata yet but the curry was lovely. I used Meera Sodha’s tomato fry recipe because the tomatoes didn’t need to be skinned. Served it with giant prawns and naan.

I wish we had a market where I could get that many tomatoes for 1.50! We eat a lot of tomatoes over here (mostly roasted) and I am constantly annoyed at the price. Hope you enjoyed it.

I made spicy tomato chutney and it's delicious, recipe was on the bbc website. Be careful with the chillis, it suggested 8-12 per recipe, I used 8 thinking it would be mild but it's pretty spicy!

I always used to make tons of fresh tomato sauce, with olive oil, onion, garlic and herbs. A tiny pinch of sugar if the tomatoes are not sweet. Often I've made 20 or so of them and when they cool, chuck in the freezer in old takeaway cartons.
