Minced beef, inspire me?

I've got some out of the freezer for dinner but I'm already bored with the idea.

DS2 won't eat anything tomato based, so it rules out the chilli, bolognaise, lasagne type staples, although for a really great idea, I'd give him sausages!

I thought maybe meatballs but now I CBA to faff about with them 😁

Shepherds/cottage pie? We had that last night, with cheese on top, bubbled under the grill, with broccoli and picked beetroot. It went down a treat in this dismal weather.

I made a cottage pie and firstly part cooked some bad idea cheap oven chips the put them on top of the meat mix and cooked for 30 mins. It made the chips edible.

Savoury mince? Whatever small veg you have with some herbs and Worcestershire sauce and stock powder.

We put dumplings on top

Tacos do not have tomato with the mince OP!
You "garnish" tacos with tomatoes if you so wish but since you don't like tomatoes, leave them out.

Burgers? Beef kofta-style kebabs?

Cobbler, savoury mince with a scone topping baked together.

Vegetables eg, peppers, stuffed with mince mixture & baked with a cheese topping.

Make a bolognese style sauce, without tomato, use soffritto, red wine, good stock etc for flavour, then use in any suitable dish.

Minced beef with a cheese & onion topping? Fry off about 4 halved & sliced onions, add to a cheese roux ( heavy on cheese, light on milk) and Lancashire cheese is best. Top the cooked mince with it & bake until the topping is brown & bubbling

Burger mince? Fried up until crispy with chopped onion and gherkin.
Cheese, mustard, ketchup and lettuce / crusty bread on the side.

I normally use pork mince, but you could try beef mince to make sang chow bow or lettuce cups. No tomato, but Chinese inspired flavours.

Another I do, also usually with pork, is Thai Larb. You could tweak it for a mild verion the kids would eat, and again, no tomato.
