We've got a bit stuck in a rut with what we eat and I'm sick of cooking the same things. We tend to have stuff like;
Spag Bol
Various BBQ food with potatoes / salad
Roast chicken with the trimmings
Chicken fajitas
Chicken / cottage pie
Bangers and mash
Chicken curry

That's about it!! The kids do normally eat their food ok (ish) but we tend to have beef and chicken a lot (never veggie, unless DH doing his own thing) veg is limited, they have peas, carrots, potato, sweetcorn, tomato, cucumber, green beans, other veg, onion etc. In sauces but a bit limited.

What can we try that is 1) very easy 2) contains some variety and is relatively healthy 3) my kids are likely to eat?

Any ideas would be fab!

Fish pie (I put peas and sweetcorn in it and serve with broccoli)
Stir fry with noodles
Pasta bakes with peppers in for veg content, grated courgette can also be hidden in there

Tacos are good fun for kids
Moussaka
Frittata
Egg fried rice with chicken or prawns
Macaroni cheese
Homemade burgers with homemade wedges and beans or salad
Toad in the hole
Chilli con carne
Thai green curry

My kids like a quiche and love to help make it and choose the filling. Recent hits have been cheese and broccoli, and courgette and sweetcorn.
They enjoy fajitas or tacos, and like homemade burgers (DD loves tuna and sweetcorn burger but DS isnt having it).
Mine also like a tagine- chicken and chickpea tagine with rice.

Look up Jamie Oliver's green mac n cheese.

Infact, his website is really good. I'm not a huge fan of him but the website is great for new ideas.

some nice/unusual recipes that are easy to cook and easy to repeat if you like it.

We have being getting Hello Fresh for a few weeks now and it has really expanded our meal variety and they have all been delicious! You can view the recipe cards without paying for the food delivery too.

These are fantastic. I omit the padron peppers as 1)I doubt I can get them in rural scotland and 2)I don't care to be surprised by my food. They're absolutely amazing.
